Savoury Mini Muffins

With bacon, cheese and chives!


  • 2 c flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3/4 c sugar
  • 1/2 c cheddar (shredded)
  • 6 slices bacon (cooked and crumbled)
  • 1/4 c chives (chopped)
  • 1 egg
  • 1 c milk
  • 1/4 c vegetable oil


  1. Preheat oven to 400F
  2. Spray mini muffin pan with Pam or the like.
  3. Sir together flour, baking powder, salt, sugar, cheese, bacon and chives. Make a well in the centre.
  4. In small bowl, beat egg and then stir in milk and oil.
  5. Pour liquid all at once into well. Mix quickly and lightly with fork until moistened. Batter should be lumpy.
  6. Pour into mini muffin tray.
  7. Bake 10 minutes or until golden.
