Savoury Mini Muffins
With bacon, cheese and chives!
Ingredients
- 2 c flour
- 3 tsp baking powder
- 1/2 tsp salt
- 3/4 c sugar
- 1/2 c cheddar (shredded)
- 6 slices bacon (cooked and crumbled)
- 1/4 c chives (chopped)
- 1 egg
- 1 c milk
- 1/4 c vegetable oil
Instructions
- Preheat oven to 400F
- Spray mini muffin pan with Pam or the like.
- Sir together flour, baking powder, salt, sugar, cheese, bacon and chives. Make a well in the centre.
- In small bowl, beat egg and then stir in milk and oil.
- Pour liquid all at once into well. Mix quickly and lightly with fork until moistened. Batter should be lumpy.
- Pour into mini muffin tray.
- Bake 10 minutes or until golden.
