Savoury Mini Muffins

With bacon, cheese and chives!

  • Mini muffin tray


  • 2 c flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3/4 c sugar
  • 1/2 c cheddar shredded
  • 6 slices bacon cooked and crumbled
  • 1/4 c chives chopped
  • 1 egg
  • 1 c milk
  • 1/4 c vegetable oil


  • Preheat oven to 400F
  • Spray mini muffin pan with Pam or the like.
  • Sir together flour, baking powder, salt, sugar, cheese, bacon and chives. Make a well in the centre.
  • In small bowl, beat egg and then stir in milk and oil.
  • Pour liquid all at once into well. Mix quickly and lightly with fork until moistened. Batter should be lumpy.
  • Pour into mini muffin tray.
  • Bake 10 minutes or until golden.
