Equipment

  • 1 Loaf pan sprayed with oil; then parchment-lined with sides over hanging; then sprayed again.

Ingredients

  • 1/2 c plain Greek yogurt
  • 1 c calorie free sweetner, such a Monkfruit
  • 1 tsp vanilla
  • 2 eggs beaten
  • 3 1/2 tbsp butter melted
  • 2 tsp baking powder
  • pinch salt
  • 1 1/4 c almond flour

Instructions

  • Bake for 50 minutes; will be bown and crispy on top
  • Mix all ingredients. See important note re lining loaf pan with parchment paper.
  • Preheat oven to 350F
