Blueberry Muffins

Mmmmm blueberries with crumble topping.

Ingredients:

  • 2 c flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3/4 c sugar
  • 1 egg
  • 1 c milk
  • 1/4 c vegetable oil
  • 1 1/2 c blueberries

Crumble Topping:

  • 1/4 c brown sugar
  • 3 tbsp flour
  • 2 tbsp butter (cubed)
  • 1 tsp cinnamon

Instructions:

  1. Preheat oven to 400F
  2. Line muffin tin with paper liners.
  3. In large bowl, stir together flour, baking powder, salt and sugar. Make a well in the centre of dry ingredients.
  4. In small bowl, beat egg with fork, add milk and oil and mix until combined.
  5. Pour all at once into the well; mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy
  6. Stir in blueberries.
  7. Pour into muffin cups.
  8. Mix together Crumble Topping ingredients; sprinkle over batter.
  9. Bake 25 minutes or until golden.
