Blueberry Muffins
Blueberry Muffins
Mmmmm blueberries with crumble topping.
Ingredients:
- 2 c flour
- 3 tsp baking powder
- 1/2 tsp salt
- 3/4 c sugar
- 1 egg
- 1 c milk
- 1/4 c vegetable oil
- 1 1/2 c blueberries
Crumble Topping:
- 1/4 c brown sugar
- 3 tbsp flour
- 2 tbsp butter (cubed)
- 1 tsp cinnamon
Instructions:
- Preheat oven to 400F
- Line muffin tin with paper liners.
- In large bowl, stir together flour, baking powder, salt and sugar. Make a well in the centre of dry ingredients.
- In small bowl, beat egg with fork, add milk and oil and mix until combined.
- Pour all at once into the well; mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy
- Stir in blueberries.
- Pour into muffin cups.
- Mix together Crumble Topping ingredients; sprinkle over batter.
- Bake 25 minutes or until golden.
