Blueberry Muffins

Blueberry Muffins

Mmmmm blueberries with crumble topping.

Ingredients

  • 2 c flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3/4 c sugar
  • 1 egg
  • 1 c milk
  • 1/4 c vegetable oil
  • 1 1/2 c blueberries

Crumble Topping

  • 1/4 c brown sugar
  • 3 tbsp flour
  • 2 tbsp butter cubed
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 400F
  • Line muffin tin with paper liners.
  • In large bowl, stir together flour, baking powder, salt and sugar. Make a well in the centre of dry ingredients.
  • In small bowl, beat egg with fork, add milk and oil and mix until combined.
  • Pour all at once into the well; mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy
  • Stir in blueberries.
  • Pour into muffin cups.
  • Mix together Crumble Topping ingredients; sprinkle over batter.
  • Bake 25 minutes or until golden.
