Blueberry Pancakes – Shuswap

A delicious staple of Ken & Gail’s.

Dry Mix

  • 3 c almond flour
  • 3 c rolled oats
  • 1 ½ c hemp hearts
  • 1 c flaxseed – ground
  • ½ c chia seeds
  • 4 tbsp baking powder
  • 4 tbsp cinnamon

Pancake Batter – 2 servings

  • 1 c dry mix
  • ½ c water
  • 2 eggs
  • ¼-½ c olive oil
  • frozen blueberries

Instructions:

  1. Mix dry ingredients in large ziplock baggie; store in fridge til needed.
  2. Prepare pancake mix and cook on preheated griddle at 350F.
