Blueberry Pancakes – Shuswap
A delicious staple of Ken & Gail’s.
Dry Mix
- 3 c almond flour
- 3 c rolled oats
- 1 ½ c hemp hearts
- 1 c flaxseed – ground
- ½ c chia seeds
- 4 tbsp baking powder
- 4 tbsp cinnamon
Pancake Batter – 2 servings
- 1 c dry mix
- ½ c water
- 2 eggs
- ¼-½ c olive oil
- frozen blueberries
Instructions:
- Mix dry ingredients in large ziplock baggie; store in fridge til needed.
- Prepare pancake mix and cook on preheated griddle at 350F.
