Prawn Satay with Peanut Dipping Sauce

Ingredients
Peanut Dipping Sauce
- 1 tbsp vegetable oil
- 1 tbsp garlic minced
- 1 tbsp ginger minced
- 1/4 c smooth peanut butter
- 1 tbsp soy sauce (reduced sodium)
- 1/4 tsp pepper
- 1/4 tsp Tabasco sauce
- 1 tbsp lime juice
- 1/2 c water
Marinade
- 1 lb prawns (about 20 large) peeled and deveined
- 1 tbsp vegetable oil
- 1/4 tsp chilli powder
- 1/4 tsp curry powder
- 1/4 tsp salt and pepper to taste
Instructions
Peanut Dipping Sauce
- Combine peanut sauce ingredients and whisk over med-high heat; set aside.
Shrimp Marinade
- Combine marinade ingredients and allow prawns to marinate until ready to cook.
- Either pan sauté the prawns or thread on skewers (previously soaked in water) and grill.
- Serve with Peanut Dipping Sauce.
