Prawn Satay with Peanut Dipping Sauce

Ingredients

Peanut Dipping Sauce

  • 1 tbsp vegetable oil
  • 1 tbsp garlic minced
  • 1 tbsp ginger minced
  • 1/4 c smooth peanut butter
  • 1 tbsp soy sauce (reduced sodium)
  • 1/4 tsp pepper
  • 1/4 tsp Tabasco sauce
  • 1 tbsp lime juice
  • 1/2 c water

Marinade

  • 1 lb prawns (about 20 large) peeled and deveined
  • 1 tbsp vegetable oil
  • 1/4 tsp chilli powder
  • 1/4 tsp curry powder
  • 1/4 tsp salt and pepper to taste

Instructions

Peanut Dipping Sauce

  • Combine peanut sauce ingredients and whisk over med-high heat; set aside.

Shrimp Marinade

  • Combine marinade ingredients and allow prawns to marinate until ready to cook.
  • Either pan sauté the prawns or thread on skewers (previously soaked in water) and grill.
  • Serve with Peanut Dipping Sauce.
